Cheesecake

Hey Y'all,

Hope everyone is enjoying there weekend and loving that fall has finally arrived, even if it is still hot.  I made this Cheesecake last Thanksgiving and it was such a hit that I couldn't wait to remake it.  The Berry Berry Cheesecake is a simple cheesecake.  You start off with a graham cracker crust and then make a plain cheesecake. This cheesecake takes overnight to set up. So what I did was start making it a 5 and then place it in the fridge till 1 hour you are about to serve it.  For the berry topping you need strawberries, blackberries, raspberries and seedless raspberry jam.  Take the berries and slice them then stir them into the jam over low heat.  Once it has become a liquid you drizzle it over the cheesecake and then place back into the fridge until ready to eat.  I love it because it looks as though you have spent long hours doing this recipe but it really only takes about 1 hour to put it all together.  It just takes a long time for it to set up in the fridge.

The best thing I realized about cheesecake is that you can make this year round especially when the berries are fresh in the summer.  In the next blog I am going to show you some cool things you can do with Mason Jars for Halloween.
