Saute Brussel Sprouts

Hey Y'all,

    I hope that everyone had a wonderful weekend because I know that we did.  It is so nice to have been off this entire weekend and get to actually do things that I love which is cooking.  I have been busy making cupcakes and all sort of little goodies.  Next week is the Oscar's so I am coming up with some little bites for that and that will be coming later up in the blog.  Now on to the Saute Brussel Sprouts these are so good and a different way of making brussel sprouts.
    The ingredients are 1.5 lbs. Brussel Sprouts, 1 lb Bacon, 3 Shallots, 1/2 cup chopped Pecans, 1/4 White Wine, Salt and Pepper.
    First heat a saute pan on medium heat. Trim the ends off the Brussels sprouts. Thinly slice them with a knife or use the slicing attachment on your food processor to shred them and then set aside. Chop up the raw bacon and place in the pan.  Cook until done and then place them in a paper lined bowl to drain the grease.  Add the chopped Shallots to the bacon grease and cook for about 2 to 3 minutes.  Add the Brussels sprouts by the handful, stirring to coat. Season with salt and pepper. Saute the sprouts, tossing until bright green and crisp-tender, about 3 minutes.  Stir in the Pecans and cook for 1 minute more to toast. Add the White Wine, stirring until the liquid is reduced and the Brussels sprouts are soft. Stir in the cooked bacon. Serve and Enjoy!!!

 
     These Brussel Sprouts are so delicious and very easy to make!!!  I love the smokey flavor that you get from the bacon.  The bacon and pecans are a nice textural crunch to the dish because everything else has a mushy texture.  The shallot has the flavor of both an onion and garlic which is so nice to the dish.  Now if you don't like White Wine, who doesn't, you could use Chicken Broth instead.  The alcohol all cooks out but leaves that nice oaky, earthy wine flavor.  I hope that your family and friends enjoy this as much as mine did.  Next time I am going to bring you Texas Hot Crackers.  This is recipe that my mom got years ago from a friend and is awesome.  Have a wonderful evening and see y'all next time.
