Broccoli Salad

Hey Y'all,

     I hope that everyone had a wonderful week and a great weekend.  We have been busy this last week with our jobs so we are trying to catch up on our blog.  I have been busy working in the garden and cleaning it out to get ready to do some planting.  In our garden this year we are going to have Tomatoes, Peppers, Squash, Zucchini, Lemon Tree, Peach Tree and Blackberries.  This year I am doing the herbs in a pot on the back porch.  They will be Basil, Dill, Cilantro, Rosemary, and Peppermint.  So hope that everything will turn out to be good and grow lots of good vegetables to eat this spring and summer.  Now on to the recipe for the Broccoli Salad.  This recipe is like the one that you get from the Sweet Tomatoes but that a little bit more items in it that makes this salad amazing!!!
    For the ingredients you will need 1 head of Broccoli, 1 lb. Bacon, 1/2 cup Red Onion, 8 oz. Cheddar, 1 cup Mayonnaise, 2 tbsp. White Vinegar, 1/4 cup Sugar, 1/2 cup Cherry Tomatoes, Salt and Pepper.
    Heat a skillet on medium heat.  Then cut the raw bacon into pieces and cook in the skillet till done.  Once done set aside on a paper lined plate.  Take the broccoli and wash it and trim off the leaves from the stem.  Cut the head of broccoli into flowerets and place in a large bowl.  With a cutting board you need to chop up the red onion and cheddar into bite size pieces.  Cut the cherry tomatoes in half.  Add the bacon, red onion, and cheddar to the broccoli.  In a small bowl mix together the mayonnaise, white vinegar, sugar, salt and pepper until blended.  Pour over the broccoli mixture and toss together gently.  Serve and Enjoy!!!!


    This is one of the best salads that I have ever had!!!!  It has such a beautiful crunch from the broccoli, red onion, and bacon.  You get the smokey flavor from the bacon but then the bite from the red onion that creates a wonderful flavor.  The cheese is so good and blends great with the all the other flavors.  It is sweet yet smokey yet has an earthy undertone.  If you want to make this more healthy you can use Greek Yogurt instead of mayonnaise because they have the same texture and it cuts calories.  I hope you enjoy this as much as my family and friends have.  Next time I am going to bring you our Broccoli Cheddar Cornbread and it is a meal within it's self!!!  Have a wonderful weekend and see you next time.
