B.L.T. Pasta Salad

Hey Y'all,
     Hope everyone enjoyed their weekend, I can't believe it is already gone.  Well it is the start of a new week and here is Houston it feels more like Spring/Summer than Fall.  So with the hot weather I thought a nice pasta salad would be good.  I have made the BLT Pasta Salad many of times before but would serve it as a warm salad in the winter.  So I decided to go for the salad but make it cold instead.  I actually liked it better cold than warm.
     For the ingredients you will need: 12 oz. Bow tie Pasta, 1/2 cup Milk, 1 pkg. Bacon, 3 Tomatoes, 1 tsp. Dried Thyme, 1 Garlic clove, 1 tsp. Dried Dill Weed, 1/2 cup Mayonnaise, 1/4 cup Sour Cream, 3 stalks of Green Onions, 1 head of Romaine Lettuce, Salt & Pepper.
      Get a pot of water going for your pasta and cook according to the directions on the package.  Drain the pasta and return to the pot.  Get a skillet out and heat over medium heat.  Chop up the raw bacon and place it in the heated skillet.  Cook bacon till done and place pieces on a plate lined with paper, then set aside.  Go ahead and chop up the tomatoes, green onions, romaine lettuce and garlic then set aside.  In a separate bowl mix together the mayo, sour cream, thyme, dill weed, garlic, 1/4 of the green onions, salt & pepper then set aside.  Take the pasta and add the milk, mix together until milk has coated the pasta evenly.  Add Tomatoes, 3/4 of the Bacon, 1/2 of the Green Onions and Romaine Lettuce and toss until blended.  Add the mayo mixture to the pasta mixture and toss until blended. Cover the pasta salad and place in fridge for at least 30 minutes or until ready to serve. Take pasta out of the fridge and top the pasta with remaining bacon and green onions.  Serve & Enjoy.


      This is the most amazing pasta salad that I have ever had.  You get the smoke flavor from the bacon and then you get that hint of dill on the back of your taste buds.  I also like that there is some softness from the pasta and then you get the crunch from the lettuce and green onions.  The mayo mixture is a little bit tangy with a little bit of earthy flavor from the thyme.  This is a salad that goes great with bbq chicken, steak, and pork chops.  I have served this at many parties, baby & bridal showers, graduations or just for dinner and it is an instant hit.  I hope you enjoy this as much as my friends, family and guests that I have served throughout the years.  Next time I will be giving you the Pan Fried Pork Chops with a Compote Herbed Butter.  Hope this you gives you some inspiration tonight to make a wonderful meal for your family and friends.  Stay tuned and see you next time.
