Herb Shrimp

Hey Y'all,

    I hope that everyone had a wonderful weekend and is enjoying this last week before school starts back up.  This past weekend was really relaxing and enjoyable.  Even if we did brave the mall for tax free shopping. I had been thinking back to the time I was in Girl Scouts and we went camping. We made Chicken and Rice in a foil packet.  I was thinking that would be so much fun to make again but didn't know where to start. Then Food Network magazine came out with 50 thing to grill in Foil.  I was so excited because it reminded me of the fun that I had that time making the chicken and rice foil packet.  I tried a couple of different recipes and I am bringing you the Herb Shrimp first. 
    For the ingredients you will need 4 tbsp. room temperature Butter, 1 cup chopped Parsley, 1/4 cup chopped Dill, 2 chopped Garlic Cloves, Salt, Pepper, Juice of 1 Lemon, 1 thinly sliced Lemon 1 pd. Unpeeled Devained Large Shrimp and pinch of Red Pepper Flakes. 
    First mix together butter, parsley, dill, garlic, salt and pepper together then set aside once blended together.  Toss together the juice of the lemon, red pepper flakes and shrimp together.  Lay a large sheet of heavy duty foil or a double layer of regular foil on a flat surface.  Put the 1/2 of the shrimp in the center of the foil and the other half of the shrimp on the other piece of foil.  On top of the shrimp place the butter on top and divide between the two packets.  Then lay half of the lemon slices on each of the herb butter shrimp. Bring the short ends of the foil together and fold twice to seal; fold in the sides to seal, leaving room for steam.  Grill over high heat for about 8 minutes. Remove from heat open and enjoy.


    These shrimp were so lemony, spicy, succulent and smokey!!!!  They were so delicious!!!  You get that bit of lemon taste from the fresh lemon squeezed on top.  But then the fresh herbs kick in along with the spice from the red pepper flakes.  The smoke flavor comes from the grill itself.  You can change up the herbs to what your family likes.  You can really do any flavor with shrimp.  I love that you make these on the grill at home, out the by the lake, or even when camping with your family.  I hope your family enjoys this dish as much as mine did.  Next time I am going to bring you another recipe from the 50 thing in Foil and it will be Zucchini and Tomatoes, so tender and juicy.  Have a wonderful evening and see y'all next time.
