Coconut Key Lime Cupcakes

Hey Y'all,

    I hope that everyone has had a wonderful weekend.  I know that I have and it has been very relaxing.  We did some cooking this weekend and tried out new recipes.  They were delicious and we will be bringing you those later on in this blog.  Since we have been so busy that we are having to catch up on blog post that we missed.  Now that things are slowing down you will definitely see more posts.  These cupcakes are amazing!!!!  They are a little bit dense but great at the same time.
    The ingredients for the Cupcake are 1 cup Cake Flour, 3/4 cup Self Rising Flour, 1 stick Butter at room temperature, 1 1/4 cups Sugar, 2 Eggs, 2 1/2 tbsp Fresh Lime Juice, 1 tbsp. Lime Zest, 1/4 tsp. Neon Green Food Coloring, 1/2 cup Shredded Sweeetened Coconut and 3/4 cup Buttermilk
     The ingredients for the Frosting are 1 1/2 cups Powered Sugar, 8 oz. Cream Cheese at room temperature, 1 stick Butter at room temperature, 1 tbsp. Lime Zest, and 1/2 tsp. Vanilla Extract.
    Pre heat the oven at 350 and place cupcake liners in a 12 cup cupcake/muffin pan.  Whisk both flours in a medium bowl together.  Add butter to flour mixture and beat together with an electric beater until smooth.  Add sugar and blend together.  Beat in eggs 1 at a time.  Add lime juice, lime zest, and food coloring and blend together.  Beat in buttermilk adding a little bit at a time and blend until all is mixed together.  Spoon about 1/3 cup of batter into the liners.  Bake them for 20 to 25 minutes or until they are done.  You can test by inserting a toothpick into the center of the cupcake and if it comes out clean they are done; if not bake for longer.  Once they are done baking let them cool in the pan for 10 minutes.  Remove them from the pan and place on a cooling rack.  Let them cool completely before you iced them.
    For making the icing while the cupcakes are baking, add all the ingredients into medium bowl.  Beat until smooth.  Spread over the cupcakes.  Serve and Enjoy!!!


    These are some of the best cupcakes that I have ever had!!!!!  They are a bit tart but sweet at the same time.  The coconut adds a bit of a nutty flavor to it but also a wonderful texture element.  The cream cheese frosting adds tartness to the cupcake.  It is a very creamy frosting that it is hard to wait to eat it on the cupcake because you can't keep from eating it.  This recipe I got from Bon Appetit Dessert cookbook but I did end up adding coconut to it.  I like coconut and to me it goes well with the flavors in the cupcake.  You can always add nuts to it as well like Almonds or Walnuts.  I hope that your family and friends enjoy this cupcake as much as mine did.  Next time I am going to bring you my Chunky Monkey Cupcake.  It has Bananas, Chocolate and Pecans all mixed up into a cake!!!!
