Stuffed Beef Tenderloin

I hope that everyone is enjoying their week so far. It has been so relaxing now that things are slowing down around here. We have been busy working and cooking and just lounging around. I can not believe that Valentine's Day is just around the corner, I swear that it feels like Christmas was just a week ago. But it wasn't this year is flying by but hopefully not to fast. This recipe is one that we have made the past 3 Christmas' and it is one that we look forward to all year long. So I have decided to share it with y'all so you can make it for your loved one this Valentine's Day.
For the ingredients you will need 3 lbs. Beef Tenderloin, 1 lb. Diced Panchetta, 1 cup Sliced Mushrooms, .5 White Onion chopped, 3 cloves Garlic minced, 1 cup Cabernet Wine, 1 cup Beef Stock, 2 tbsp. Butter, Salt & Pepper.
In a saute pan over medium heat melt the butter. Add the Pancetta to the butter and cook till done about 5 to 8 minutes. Then add the mushrooms and onion to the pancetta. Cook till onions are translucent and mushrooms are tender with a fork, for about 10 minutes. Then add the Garlic and saute for about 2 minutes making sure that it does not burn. Then add the wine and beef stock to the pancetta mixture and cook on a simmer till liquid has reduced in half. While that is simmering take the beef tenderloin and butterfly it. Then cover the tenderloin with wax paper and with a rolling pin beat the tenderloin until it is flatten and able to roll up. This is going to help tenderize the meat as well as make it cook more evenly during the cooking process. Place the tenderloin on a roasting rack and season with salt and pepper. Take the pancetta mixture and scoop it into the middle of the tenderloin. Keep some of the mixture to the side for you to use as a gravy to go on top when it is done cooking. Roll the meat up and tie on both ends and in the middle with twine. Pre Heat the oven at 375 and cook for about 1 hour or until meat is at medium rare. Let it stand at least 5 minutes before slicing. Serve with Garlic Mash Potatoes and your favorite vegetable.

This dish is absolutely one of the best dishes that we have ever made!!!! The meat is so juicy and tender that you don't need a knife to cut it with. The pancetta adds a nice smoke flavor but then you get wonderful earthy tone from the mushrooms. The onions and garlic give the meat a little hint of a sweet note but it comes in at the last moment. When you drizzle the extra gravy on top it is like a party in your mouth. We always serve this over potatoes because you can drag it through them and it is so good. This dish will impress anyone that you make this for because people will think you have been cooking all day but it takes maybe 30 minutes to prep and then the rest is done in the oven. I hope that your family enjoys this as much as my family and friends have. The next time I will be bringing you my Sweet and Spicy Coleslaw.
