Broccoli Cheddar Cornbread
Hey Y'all,
I hope that everyone is having a wonderful week so far. I know that we are having a good week and it has been really busy so far. This weekend we did not do any cooking instead we visited many restaurants and they were delicious. So for Lent I gave up Fry Foods and Soda. It has been 1 week and still going strong!!! Don't get me wrong I have had cravings but I am doing my best to go the whole 40 days. I will keep y'all updated. Now onto the Broccoli Cheddar Cornbread and this is a recipe that I got out of a church cookbook. It is so good, moist and delicious!!!
For the ingredients you will need 2 boxes Jiffy Corn Muffin Mix, 1/2 cup Milk, 2 cloves Garlic, 1 cup Cottage Cheese, 4 Eggs, 1 tsp. Salt, 1 cup Shredded Cheddar Cheese, 1/2 cup Shredded Cheddar Cheese, 1 stick Butter, 1 Onion and 10 oz. Frozen Chopped Broccoli.
First you need to chop up your onion and mince the garlic. Heat a saute pan on medium heat and add the butter. Once butter is melted add the chopped onion and saute for about 10 minutes till tender and translucent. While the onion is cooking cook the broccoli according to the directions on the package in the microwave. Add the broccoli to the saute onion and cook for about 3 minutes. Then add the garlic to the onion and broccoli and cook for about another 2 minutes. Turn off burner and set aside. In a large bowl mix together the corn muffin mix, milk, cottage cheese, eggs, salt and 1 cup Cheddar Cheese. Mix that until blended. Add the onion and broccoli mixture to the batter and mix together until blended. Pour mixture into a Pyrex dish and top with remaining cheese. Bake at 375 for 30 minutes. Serve with Butter and Enjoy!!!!!!
This is such a wonderful cornbread!!!! It is moist and full of flavor. The onions and broccoli add a nice texture to the cornbread. The cheese is nice because if you use sharp cheddar it adds that nice bit of sharpness to the cornbread. One time we added cooked crawfish the onion and broccoli and saute for about 5 minutes. It was so amazing and delicious. But feel free to add any meat you want to it. I hope that your family and friends enjoy this as much as mine did. Next time I am going to bring you my world famous brownies. They are so amazing and you can not just eat one!! Have a wonderful day and see y'all next time.
