Ultimate Grilled Cheese

I know that it has been awhile since I have written in my food blog.  A lot has happened since I last wrote.  I got a job promotion and moved to the Texas Hill Country!!  It is absolutely beautiful out here and I have the opportunity to eat at some great places and meet great people.  This is something that I enjoy doing very much and I am going to try to bring you a new recipe each week. They are going to range from something fast to healthy to indulgent.  I hope you will continue on this journey with me and my new found love of different foods.
This recipe I came up with back in college but over the years I have been playing with it and have finally come up with the Perfect Grilled Cheese.  This grilled cheese has one of the best aioli's that I have ever made. It is a Roasted Garlic and Sun dried Tomato Aioli with 3 types of Cheese, Pepper Bacon, Avocado, and Tomato all served on beautiful Sourdough Bread.  This recipe can make 4 sandwiches. 
Ingredients: 3 Garlic Heads, 1/4 cup chopped Sun dried Tomatoes (not in oil), 1 cup Mayo, 1/3 cup Lemon Juice, 2 Tbsp. grated Parmesan Cheese, 1/2 tsp. Dijon Mustard, 1/8 tsp. Cayenne Pepper, 1/8 tsp, Worcestershire Sauce, 1/4 tsp. Salt, 8 slices Sourdough Bread, 12 slices American Cheese, 8 slices Havarti Cheese, 20 slices Gruyere Cheese, 10 slices Pepper Bacon, 20 slices Avocado, 10 slices Campari Tomatoes, and 8 tbsp. Butter.
Recipe:
Pre heat the oven to 375. Cut the crowns off the Garlic. Drizzle Olive Oil over the Garlic and place on a piece of foil.  Wrap the Garlic up and place in the oven.  Roast the garlic for 1 hour.  Once Garlic is done, take out of the oven and let it cool to room temperature. Once Garlic is cooled remove the Garlic for the pods and place in the food processor.  Add the sun dried tomatoes, mayo, Dijon mustard, lemon juice, Parmesan cheese, cayenne pepper, Worcestershire sauce and salt.  Blend until well combined.  Place in a container and refrigerate for at least 8 hours or over night. Take 2 slices of sourdough bread and place 1 tsp. of Aioli on each slice of bread. Add 3 slices of American cheese to the bread - 1 and 1/2 slices on each slice of bread.  Add 1 slice of Havarti to each slice of bread and 5 slices of the Gruyere cheese to 1 slice of bread.  Add 5 slices of avocado and 5 slices of Campari tomatoes to the bread.  Cut bacon in half and add 5 slices of bacon on the bread.  Put the sandwich together and butter the outside of the sandwich with 1 tbsp. of butter.  Place in a skillet over medium heat.  Cook for 5 to 7 minutes on each side.  Once cheese is melted and bread is toasted remove from skillet.  Cut the sandwich in half and Serve and Enjoy.


 

What I love about this grilled cheese in particular is that every component is necessary to making this sandwich so great.  You have that wonderful aioli and makes the sandwich rich and zesty with that garlic flavor as well as the sun dried tomatoes that bring a hint of sweetness to the sauce.  Then you have the 3 cheese that compliment each other so well and have a great melting point.  The Pepper Bacon brings in the spice and smokey flavor to cut through the richness of the cheese.  The tomatoes add the acid that breaks though and balances with the avocado to a give it this fresh flavor.  This is sandwich that will blow people away when you tell them that you are having grilled cheese. It will make you feel that you are eating a sandwich at a fancy restaurant but you have actually cooked this out of your home kitchen. I hope you all enjoy this as much as I did.
