Grilled Corn and Tomato Salad

Hey Y'all,

    I hope that everyone had a wonderful holiday season!!  It is such a wind whirl of everything going on that in a way I am glad that it is over.  Don't get me wrong love the food that goes along with the holidays but I love January because it is a slow month to catch up on some much needed rest.  We have been busy cleaning the house and getting rid of items that we no longer use anymore.  Never realize how much stuff you have till you start going through it.  Can't believe this month is already over and now it is already Valentine's Day!! Crazy!!  I don't think I am ready for all this chocolate but I will never turn it down!  Now on to the Corn and Tomato Salad, this recipe is really good for a spring BBQ.  It is really easy and simple to make with using fresh ingredients.
    For the ingredients you will need 1/4 cup Rice Wine Vinegar, 1/4 cup chopped Basil Leaves, 1 tsp. Sugar, Salt, Pepper, 1/2 cup Extra Virgin Olive Oil, 1 tbsp. Extra Virgin Olive Oil, 8 Ears Sweet Corn, 1 Yellow Onion, 1 pint Cherry Tomatoes, and 8 oz. Maytag Blue Cheese crumbled.
    First get your grill heated over medium heat.  Leave the corn inside the husk and place on the grill and cook for about 10 to 15 minutes till tender.  Chop the onion in half and slice thinly.  Place the 1 tbsp of olive oil in a saute pan and heat over medium heat.  Once heated add the onion and saute for about 5 minutes till tender and translucent.  Slice the tomatoes in half and set aside.  In a blender combine the vinegar, olive oil, basil, and sugar.  Blend till smooth and season with salt and pepper.  Take the corn off the cob and place in a bowl.  Add the onion and the tomatoes to the corn.  Toss until combined and pour the basil dressing over the corn mixture.  Toss the cheese in right before serving and enjoy!!
 
    This salad is very refreshing and uses the flavors of the season.  You get the nice charred corn that adds a wonderful smoke element to this dish.  The tomatoes give off a great acid that is needed in this dish to balance out the sweet onions.  The basil is very aromatic and works great as a dressing. The cheese adds salt but also a tang that comes great from the blue cheese.   You can use the dressing over many salads.  You can serve this along fish, chicken, pork or beef.  It really goes well with anything.  I hope that your family enjoys this dish as much as mine did.  Next time I am going to bring y'all a Lemon Meringue Pie.  It is tart, sweet and so delicious.  Have a wonderful day and see y'all next time.
