Zucchini and Tomatoes

Hey Y'all,

    I hope that everyone is having a wonderful weekend and enjoying this gorgeous weather that we are having here in Houston.  Been busy working and Allie has been busy with school.  Next weekend is Allie's 22 Birthday, so she is pretty excited about that.  We will be going out for her birthday but she hasn't decided where.....most likely Italian which means Pallotta's.  Haven't decided what I am getting her yet but I am sure it will come to me.  I am so excited for fall because that means comfort food to me and I am so over salads.  These Zucchini and Tomatoes in a foil pack can be made either on the grill or you can also put it in the oven.  These become so tender, that they melt in your mouth. 
    For the ingredients you will need 2 Zucchini, 1 Yellow Squash, 1/2 Red Onion, 15 Cherry Tomatoes, 10 Basil Leaves, 2 Garlic Cloves, 2 tbsp. Olive Oil, Salt and Pepper. 
     First wash all of your vegetables and herbs, then dry them completely.  Slice your zucchini and squash into 1/4 inch thick slices and place in a mixing bowl.  Chop up the onion into bite size pieces and place it with the zucchini mixture.  Slice the cherry tomatoes into halves and place in the mixing bowl as well.  Julienne the Basil and place in the bowl. Mince the Garlic cloves and place in the bowl.  Toss the Zucchini mixture with the Olive Oil.  Season with salt and pepper.  Lay a piece of foil on the counter and place the zucchini mixture in the middle of the foil.  Wrap the foil up around the mixture and place on grill over medium heat.  Cook for about 20 to 30 minutes.  Take off the grill and let it cool for about 5 minutes.  Open and serve!!!

    This dish is so delicious!!!!  The vegetables are so tender and juicy, that they literally melt in your mouth.  You get a bit of smokey flavor from the grill that has been infused into the vegetables.  The basil adds a nice layer of flavor to the dish.  The garlic and onions take on a sweet flavor from being cooked down.  The tomatoes are sweet but then you get a cut of salt from the zucchini.  Over all this dish is easy and fresh.  You can make this any night of the week and everyone will love it.  I hope that your family enjoys this dish as much as mine did.  Next time I am going to bring you another recipe from 50 things in a foil pack Bread Pudding.  That is right dessert on the grill.....what???  It was so good and it had fresh fruit in it.
