Bacon & Cheese Quiche

Hey Y'all,

    Hope everyone is enjoying their wonderful weekend.  This weekend we have been watching a lot of football and just relaxing since the holiday season is now a wrap.  So we are trying to be healthier and will be bringing you some healthier options this year.  On to the quiche, this quiche I made into mini quiches for the catering job I had.  But you most certainly can make this one large quiche if you decide too. 
    For the quiche you will need 1/2 Onion minced, 8 strips Bacon, 3 Eggs, 1 1/4 cup Heavy Cream, Salt, Pepper, 1 tbsp. Dill Weed, 1/2 cup Colby Jack Cheese, and 2 box refrigerated Pie Crust.
    In a saute cook the Bacon over medium heat.  Once Bacon is cook set aside and let it cool then chop the bacon up.  Remove the bacon grease from the pan leaving only about 1 tbsp. of grease behind.  Then add the minced Onion to the pan and cook till it becomes translucent and soft for about 8 to 10 minutes.  Set aside the onions.  Roll out your pie crust and with a biscuit cutter cut 24 of them out and place in the mini muffin pan.  In a large mixing bowl mix together the eggs, heavy cream, salt, pepper, and dill weed.  When it is blended together add the saute onion, chopped bacon and cheese to the egg mixture.  Mix altogether until it is well blended.  With a spoon place the mixture into the muffin pan fill them about 3/4 of the way up.  You can sprinkle more cheese on top if you would like.  Bake at 350 for 10 to 15 minutes.  Serve and Enjoy!!!!

    These are so delicious and you can not just eat one!!!  They have a wonderful smoke flavor from the bacon and then you the tangyness from the dill.  This mixture doesn't have that over powering egg flavor that some of the quiches that you get in the frozen section.  They are light and fluffy and great for any party or occasion you have coming up.  Now I used pie crust that you can buy at the store but you can make you own the day before and let it refridgerate overnight.  I hope you enjoy this recipe as much as my family and friends did.  Next time I will be bringing you our Sun Dried Tomato and Spinach Quiche.  Have a wonderful day and see you next time.
