Anti Pasta Platter and Deviled Eggs

Hey Y'all,

     Hope everyone had a wonderful weekend.  I can't believe that we are only 2 weeks away from Christmas, this year has literally flown by.  As the office parties and other Christmas parties are quickly coming upon us I am offering some of my easiest and delicious appetizers for you to entertain with.  The first is great to always have on hand which is Deviled Eggs and the other one you can pick everything up at the store then just arrange on a platter which is Anti Pasta Platter.
       For the Deviled Eggs you are going to need 12 Eggs, 1/4 Mayo, 2 tbsp. Sweet Pickle Relish, 1 tbsp. Onion chopped finely, and Pepper.  First put the eggs is a pot and cover with water and add Salt to the water.  Cook on medium high heat until boiling then cook for 10 minutes. Turn off heat and let them sit there in the water for another 10 minutes.  Empty water and start pealing the eggshells away from the eggs.  Once eggs are pealed cut them in half like a hot dog and place them on a platter.  Scoop out the yolk and place them in a mixing bowl.  Then add the the mayo, sweet pickle relish, onion and pepper.  Mix that altogether with the yolks until blended.  You can add more mayo to the consistency that you like.  Then with a spoon scoop out the yolk mixture and place back in the egg.  Once you have filled all the eggs sprinkle the tops with Paprika.  Refrigerate and Serve!!!
    
    For the Anti Pasta Platter you are going to need 1 lb. Salami, 1 lb. Prosciutto, 1 wedge Maytag Bleu Cheese, 1 block Vermont Cheddar cut into cubes, 1 wedge Brie, 1 jar Green Olives, 1 jar Black Olives, 1 jar Pickles, and 1 jar Marinated Mushrooms.  Preheat oven to 350 and place the brie in a warmer.  Place in the oven for 15 minutes.  Slice all the meat and place on a platter.  Arrange the cheese on the platter.  In separate serving bowls place the olives, pickles and mushrooms.  Once the Brie is warmed take out of the oven and place in the center of the meat and cheese platter.  Serve with crackers, crostini or bread. Enjoy.


       These dishes only take minutes to make and are so delicious.  You have enough stress in your life during this time of the year don't make it harder on yourself.  These can be done during the week or on the weekend when ever you have time.  Next time I will be bringing you my Steak Marsala. It is so good and different from the everyday Chicken Marsala.
