Asian BBQ Ribs

    I hope that everyone is having a wonderful summer.  This past week me and my mom went to Texarkana and had a blast.  We saw my grandma and one of my mom's friends from high school.  We saw this really cool neighborhood, that reminded my of West University here in Houston.  The only thing that is different is the price by a lot.  My grandma is doing much better and is most likely moving here to Houston.  I am excited because it will be less stress on my mom and make things a lot easier.  I was also able to go through her recipe book and get some excellent recipes.  I will be bring those to you over the next month.  These ribs I made back in May.  It was my first time making them and coming up with the recipe on the fly.  It turned out amazing!!!
     For the ingredients you will need 2-3 pds. Pork Short Ribs, 2 8oz. jars of Hoisin Sauce, 1 32oz. can Crushed Pineapple, 1 tbsp. Chinese Five Spice, 1 bunch Cilantro, 2 stalks Green Onions, 2 tbsp. Chili Garlic Sauce, 1/2 of an Onion, 3 tbsp. Fresh Ginger, 1 tbsp. Vegetable Oil, Salt and Pepper.
    First you are going to marinate the meat.  You need to mince 1 1/2 tbsp. of fresh ginger.  Also chop up about 1/4 cup of cilantro.  Place the meat in plastic bag.  Season with the chinese five spice.  Add the 1 1/2 tbsp. of ginger and 1/4 cup of cilantro to the seasoned meat.  Add 16 oz. of the crushed pineapple to the seasoned meat.  Zip the bag up and toss the meat in the marinate and make sure it all gets covered.  Place the marinated meat in the refrigerator for at least 8 hours or overnight. 
    To make the bbq sauce go ahead and finely chop the 1/2 of an onion.  Heat a pot with vegetable oil over medium heat.  Once oil is heated add the finely chopped onion and cook till translucent.  Add the rest of the chopped Ginger to the onions.  Saute for about 2 minutes.  Add the hoisin sauce to the onions and garlic.  Also chop up the rest of the cilantro and green onions and add them to the sauce as well.  Add your chili garlic sauce and the rest of the crushed pineapple to the bbq sauce.  Season with pepper and salt if needed. Heat over medium heat till the sauce becomes thicken and the flavors have married.  About 30 minutes to 1 hour.  I made the sauce the day before and let it cool in the refrigerator.  This makes the sauce really develop in flavor.
    To cook the ribs heat the oven to 300.  Place the ribs on a cookie sheet lined with foil.  Pour out the pork ribs with the marinate.  Create a foil boat and make sure that the ribs are covered.  Then bake them for 2 hours.  Then open the foil boat and baste the ribs with the bbq sauce.  Do this for 1 hour and baste them every 15 minutes of that hour.  Once the ribs are done remove them from the oven and place on a platter.  I put the remaining sauce on the side for people who want more.


    This dish is tangy, sweet, spicy and so delicious!!!!!!!  The pork ends up falling off of the bone and the meat is so tender.  You get that wonderful sweet flavor coming through with the pinepple and the chinese five spice.  The spicy comes with the chili garlic sauce and cilantro.  It is not overpowering at all but adds more of a hint of spice.  The bbq sauce has so much depth to it that you get different flavors through out every bite.  It also has a nice texture to the rib and to the sauce.  I hope that your family enjoys this as much as mine did.  Next time I am going to bring you our homemade Macoroni and Cheese.  It is way better than the Kraft and it so simple anyone can do it.  I hope y'all have a wonderful day and see y'all next time.
