Sun Dried Tomato and Spinach Quiche

I hope that everyone had a wonderful weekend. This month has just flown by due to being back at both jobs now. I love every moment of it but I really miss doing this blog with my wonderful food! So what I have to show you today is my Sun Dried Tomato and Spinach Quiche. It is so delicious and has a great flavors. What I love about Quiche is that you can take a basic recipe and add any ingredients to it and make it your own.
For the recipe you will need 1 box Pillsbury Refrigerated Pie Crust, 1 cup Heavy Cream, 3 Eggs, 1 pkg. frozen chopped Spinach, 8 Sun Dried Tomatoes, 1 tbsp. minced Garlic, 1 tsp. Basil, 1/4 tsp. Rosemary, 1 cup Mozzarella Cheese, Salt & Pepper.
First cook your spinach according to the directions on the package in the microwave. Take the mini muffin tin and spray with a non sticking spray. With a biscuit cutter cut out 24 rounds and mold them into the muffin tin. In a bowl mix together the eggs, heavy cream, basil, rosemary, salt and pepper until well blended. Minced the Garlic and add to the egg mixture. Julienne the Sun dried tomatoes and add to the egg mixture. Take the spinach and place it in a paper towel. Squeeze out all of the remaining liquid from the spinach. Then chop up the spinach and add to the egg mixture. Add the mozzarella to the egg mixture and blend all of it together. With a tablespoon add the quiche mixture into the pie shells. Bake at 350 for 10 - 15 minutes. Serve and Enjoy!!!!
These are so amazing and delicious!!!!! I love the flavor that you get from the tomatoes that mixes so well with the spinach. The herbs compliment the flavors from the tomatoes. It has the flavors that you would see at an Italian dinner. You can add onion to it and saute it with butter and garlic. These items go so quickly at a party and people will just gobble them up. Next time I will be bringing you a breakfast casserole that can definitely double as a bread pudding. It is so good and delicious!!! Have a wonderful day and see you next time.
