Bacon Cheese Meatloaf

Hey Y'all,

This week I am sharing with you one of my favorite meatloaf recipes.  I know that some people are thinking ugh...another dried out meatloaf but you are wrong.  This meatloaf is juicy on the inside and has a great crust on the outside to give it that crunch.  This is a recipe that me and my sister came up with about a year ago and I have been working on it ever since to perfect it and make it great.  This is a great meal to make on a Sunday after church and it makes the house smell so good.  Serve it with some mash potatoes and green beans and you have the perfect southern comfort meal that your family and friends will enjoy.
Ingredients: 2 lbs Lean Ground Beef 93/7, 6 slices Wheat Bread, 1 cup Milk, 1/2 medium Onion chop, 1 tbsp. Garlic minced, 1 tbsp. Butter, 3 Eggs, 1/2 cup Grated Parmesan Cheese, 1/2 cup Shredded Cheddar Cheese, 1/2 cup Parsley chopped, 1 tsp. Black Pepper, 1 tbsp. Lawry's Seasoning Salt, 1 pkg Low Sodium Bacon thin sliced, 1/2 cup Ketchup, 6 tbsp. Brown Sugar, 4 dashes Hot Sauce, 5 dashes Worcester Sauce, and 1/2 tsp. Dry Mustard.
Recipe: Tear apart the bread and place in a bowl.  Pour Milk over bread and let it soak.  Heat a skillet over medium heat.  Add butter to skillet and once melted add the chopped onion to the skillet.  Saute for about 5 - 10 minutes till becomes translucent.  Once translucent add in the minced Garlic and sauté for about 3 minutes. Remove from heat and let it cool to touch.  Add ground beef, Parmesan cheese, cheddar cheese, parsley, garlic and onion sauté, black pepper and seasoning salt to the soaked bread.  Beat the 3 eggs and add to the bowl.  Mix all ingredients together until combined and set aside. Line a broiler pan with foil and spray with cooking spray so it won't stick to it.  Lay the bacon touching together in rows and place the meat mixture on top of the bacon.  Form the meat mixture into a loaf form and pull the bacon ends over the meatloaf.  Basically you want to have the bacon wrapped around the entire meatloaf so it is encased.  In a bowl add ketchup, brown sugar, dry mustard, hot sauce and Worcester sauce and mix together until combined.  Pour 1/2 the ketchup mixture over the meatloaf and spread it so it completely covers the meatloaf.  Place in a preheated oven at 375 for 1 hour.  Remove from oven and pour rest of ketchup mixture over the meatloaf and bake again for another 30-45 minutes.  Cut meatloaf to make sure that it is done.  Once meatloaf is cooked take out of oven and let it sit for about 10 minutes. Slice and Serve.


The first thing you are most likely thinking is that she didn't put salt in her meatloaf except seasoning salt.  Well with the bacon dripping its fat into the meatloaf it is going to give it flavor and salt so there is no need to add extra salt to this recipe. You will not lose any flavor at all.  This meatloaf is juicy all the way through and the bacon gets crisp on top and the sugar gives it this kind of sweet flavor that cuts through the richness of the meatloaf.  You get that crunch of onion as well as these bits of melted cheese through out the meatloaf.  This recipe takes your plain old meatloaf and gives it a great twist that the entire family will love.  I know that my family enjoyed this recipe and I know that your family will as well.  I mean come on who doesn't love a little bit of Bacon.
