Key Lime Pie
Hey Y'all,
I hope that everyone had a wonderful Valentine's Day. We went out for dinner and that was not to bad of a wait but when we left it was double the time we started. So next year will definitely be cooking a meal at home. I had promised y'all Lemon Meringue Pie but I remember that I had already done that one in an earlier blog, so I am bringing you Key Lime Pie. It is another citrus pie that is super easy and really delicious. This pie is great for the spring and summer seasons.
For the ingredients you will need 1.5 cups crumbled Vanilla Wafers, 1/2 cup Sugar, 1/2 stick Butter melted, 2 14oz Sweetened Condensed Milk, 1 cup Key Lime Juice and 2 Eggs.
First thing that you are going to do is preheat the oven to 375. In a bowl mix together the vanilla wafer crumbs, sugar and melted butter. Using your hands is best for mixing the crust. Press the mixture into a 9 inch Pie plate and make sure that is firmly in the plate. Bake for about 20 minutes or until brown. Remove from the oven and allow to cool completely to room temperature before adding the filling. Lower the oven to 325. In another bowl combine the sweetened condensed milk, key lime juice and eggs. Mix together until well blended and pour into the pie shell. Bake for 15 minutes. Take out of the oven and place in the refrigerator for 2 hours to firm and set. You can top with whip cream and zest a lime on top of the cream. Serve and Enjoy!!!!
This pie is easy, simple, refreshing and delicious!!! The crust is sweet which is able to cut through the acidic tone in the key lime filling. The filling is zesty and tart with the hint of sweetness coming through from the milk in the pie. This pie goes great with any gathering you are having or if you want just to have the pie for yourself. This is great to make during the summer and late spring because the key limes are in the prime of the season. If you don't want to squeeze all the key limes then you can use just regular limes. I hope that your family and friends enjoy this as much as mine did. Next time I am going to bring you my PawPaw's famous Sausage Balls.
