Jalapeno Poppers

I hope that everyone had a wonderful weekend and that y'all had a great Easter!!!! We spent it with friends that are like family and we had a wonderful spread. I made a wonderful Strawberry Meringue Cake, Ham and my mom made her wonderful Baked Beans. Those recipes will be coming later on this month. I made these poppers back during the Super Bowl and they were an absolute hit. They are full of flavor and great for any occasion that you are having or attending.
The ingredients are 18 Jalapenos, 1 lb. Chorizo, 1 lb. Bacon, 8 oz. Cream Cheese, 8 oz. Shredded Cheddar Cheese, 2 tbsp. chopped Garlic, Salt & Pepper.
First thing is wash the Jalapenos, slice them in half and remove all the seeds from the peppers. Lay the peppers on a cookie sheet. In a saute pan cook the Bacon over medium heat and then let it drain on a paper lined plate. Then drain the grease and cook the chorizo over medium heat. In a bowl mix together the cream cheese, cheddar cheese and garlic together until blended. Crumble the chorizo and bacon up and add it to the bowl with the cream cheese mixture. Mix all that together until well blended. Season with Salt and Pepper to taste. Scoop the mixture into the Jalapenos. Bake in the oven at 350 for about 15 to 20 minutes just to heat them up. Serve with Sour Cream or Ranch Dressing for dipping.

These Jalapeno Poppers are so good!!!!! What I also love about this dish is that you cook it in the oven and don't have to stand over a hot grill for next hour or two. So you can make these year round even when it is 105 degrees in Houston and not break a sweat!! You get a crunch from the Jalapeno that is refreshing and a great texture element to the dish. The Bacon mixed with the Chorizo is such a great smoky and spicy flavor that mixes so well with the pepper. The cream cheese and cheddar cheese cool off the mouth and balances the spiciness that comes from the chorizo. This to me is the Mexican version of a potato skin, so that is why I like to dip mine in sour cream. The ranch dressing is also another great dip for the Jalapeno Poppers. I hope that your family and friends enjoy this as much as mine did. Next time I am going to bring you a Creme Brulee recipe that is so easy and you can add anything to it.
