Parmesan Chicken Strips & Ranch Potatoes

Hope everyone is having a wonderful week. It has been so long since our last blog and lots of cooking has been happening. I recently took a nanny job for my cousin and have been driving to Bryan, Texas every week. So therefore I have now had time till today to up date y'all on what we have been cooking. This recipe was one that I created back when I was about 13 years old and over the years have perfected it. It is a really easy dish one you can whip up in about 10 minutes and only takes 30 minutes to cook. All you need is 4 - 6 boneless skinless chicken breast, 1 - 1.5 cups Italian Bread Crumbs, 2 tsp. Garlic, 1 tsp. Basil & Oregano, .5 tsp Rosemary, Salt & Pepper, .5 cup Shredded Parmesan Cheese and 3 Eggs. First cut the Chicken into strips and its about 4 strips per breast. In one bowl whisk the eggs together till blended. In another bowl mix the rest of the ingredients together. Go ahead and have your cookie sheet ready to go next to your breading bowl. Take the chicken strips and dunk them in the eggs then cover them all over with breading mixture and shake off excess breading then place on cookie sheet. Continue this process till all the chicken is on the cookie sheet. Bake at 350 for 30 to 40 minutes.

Meanwhile as your chicken is cooking go ahead and start working on your Ranch Potatoes. You will need 3 - 5 Potatoes (depending on the size), 8 oz Cream Cheese (room temperature), 8 oz Sour Cream, Salt & Pepper, .5 stick of Butter and 1 pkg. Hidden Valley Buttermilk Ranch Dressing Mix. Peel and chop the potatoes then place in a pot of water. Cook them till they are done and then drain them. Return them to the pot and add the butter. Mash them together. Add cream cheese, sour cream, salt, pepper, and ranch mix. Blend all of that together with the potatoes and serve with the chicken.
I also made that evening was some biscuits from a can. Very easy to do I took them out and place them on a cookie sheet in a circle and put a tab of butter on top of each biscuit. Baked them according to the directions on the can. Once they came out of the oven then top them each with another tab of butter.
The Chicken is amazing!!! I love this chicken because it gives you the crunchy texture of Fried Chicken but this is a healthy option because it is baked not fried. I love the spices in the chicken and the cheese adds the right amount of sharpness to the herbs in the chicken. If you wanted to make it a little be more healthy only use the egg whites of the egg instead of the whole egg. I love the potatoes!!!! This is something that you can do to potatoes to change it up once in a while. They are very creamy, velvety and just melt in your mouth good. I love to drag the chicken through the potatoes and the flavors blend together perfectly. I like putting the butter on the biscuits before and after because it makes them light, soft and melt in your mouth. I hope that this meal has inspired you to go home and cook this evening.
